How we cook

It started with a cast-iron skillet

Next Games began on a lake dock with a single grilled fish recipe and a notebook of flavor combinations that mostly needed work.

The kitchen is equipped now and the smoker is ours, but every dish is still prepared one plate at a time, by cooks who stand behind what they serve.

We cook less than we could. It keeps the ingredients honest and the flavors sharp.

If a fish recipe leaves our kitchen and we would not serve it to family, we do not serve it at all.

Fresh catch, local waters

We buy from fishmongers we know, in quantities we use before the catch ages.

Trimmings become stock and sauce, and every seasoning blend is mixed here from whole spices rather than bought pre-ground.
